A base of creamy whipped feta—blended with Greek yogurt and lemon zest—is the perfect canvas for roasted butternut squash cubes and crispy bacon bits. For the Butternut Squash & Bacon Topping:
- 3 slices (3 oz.) thick-cut bacon
- About 1/2 butternut squash, peeled and cut into 1/2-inch cubes (2 cups of cubes)
- 1 tablespoon olive oil
- 2 teaspoons Harmony All Purpose Blend
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
For the Whipped Feta:
- 5 oz feta cheese
- 1/3 cup Greek yogurt
- 2 teaspoons olive oil
- Zest from 1 lemon
For serving:
- Drizzle of hot honey
- 1 teaspoon minced chives, fresh thyme leaves, or chopped parsley
- Pita chips or crostini
Instructions:
1. Preheat oven to 400ºF and line a large sheet pan with parchment paper.
2. Arrange the bacon slices on one half of the baking sheet. Add the cubed butternut squash to the other half, drizzle on the olive oil, and season with All Purpose Blend, salt, and pepper. Use your hands to toss the squash and spread it in an even layer.
3. Bake the bacon and squash for 24-28 minutes until the bacon is crispy and squash is tender. If the squash needs more time, remove the bacon from the sheet pan and return the squash to the oven until it’s done. Let the squash cool for at least 20 minutes so that it doesn’t melt the whipped feta!
4. While that bakes, make the whipped feta: In a food processor, blend the feta, Greek yogurt, olive oil, and lemon zest until smooth, 1-2 minutes. Place in refrigerator until ready to serve.
5. Drain the bacon on paper towels, then chop it up. If the squash is greasy from the bacon fat, you can drain it on paper towels, too.
6. Spread the whipped feta in a shallow serving bowl, then top with the roasted squash, bacon, a drizzle of hot honey, and fresh chives, thyme, or parsley. Serve with pita chips or crostini and dive in!
