For the pasta:
- 10 ounces fettuccine, spaghetti, or your favorite long noodles
- 4 oz cream cheese, cut into large cubes
- 4 cups fresh spinach, chopped
- 2 tablespoons Harmony Ranch Blend
- Zest of 1 lemon
- 1/4 teaspoon Kosher salt
- Freshly ground black pepper
For the chicken:
- 1 1/2 lbs. boneless skinless chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons Harmony Southwest Blend
- 1/2 teaspoon kosher salt
- 1 teaspoon garlic powder
Instructions:
1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions, then drain the pasta, reserving at least 1 1/2 cups of pasta water.
2. While the pasta cooks, make the chicken. Add the chicken thighs to a large bowl. Drizzle on the olive oil and season with Harmony Southwest Blend, salt, and garlic powder. Use clean hands to toss the chicken until evenly coated.
3. Heat a large skillet over medium heat. Once the pan is hot, add the chicken thighs. Cook for about 4 minutes per side until the chicken is golden brown and cooked through. Let rest for a few minutes, then chop the chicken into bite-sized pieces.
4. Add the chopped spinach to a large mixing bowl. Top with the drained pasta, cubed cream cheese, Harmony Ranch Blend, lemon zest, salt, pepper, and 1/2 cup of the reserved pasta water. Use tongs to toss the pasta, adding more pasta water as needed, until the cream cheese is fully melted. Taste and add more salt and pepper if desired.
