Ingredients:

  • 4 jalapeños
  • 8 slices bacon
  • 8 oz. cream cheese, at room temperature
  • 1 cup plain Greek yogurt
  • 1 cup grated sharp cheddar cheese, divided
  • 1 1/2 tablespoons Harmony Ranch Blend
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 scallion, thinly sliced
  • Tortilla chips, Ritz crackers, or carrot sticks for serving

Instructions:

1. Preheat oven to 375ºF and line a large sheet pan with parchment paper.

2. Prepare the jalapeños: Use a knife to cut off the stem end, then slice lengthwise. Remove and discard the seeds.

3. Place the sliced jalapeños on one half of the sheet pan, and the bacon on the other half. Roast for 16-20 minutes until the jalapeños have softened and the bacon is crispy. Don't turn off the oven.

4. Place the bacon on paper towels to remove extra grease. Chop the bacon into small bits, setting about 1/4th of the bits aside for garnishing the dip. Finely chop the roasted jalapeños.

5. Add the softened cream cheese to a mixing bowl, along with the Greek yogurt, chopped bacon and jalapeños, 1/2 cup of the shredded sharp cheddar cheese, Harmony Ranch Blend, garlic powder, salt, and pepper. Use a wooden spoon to mix until well-combined.

6. Spread the cream cheese mixture evenly on the bottom of an 8x8 baking pan or 9-inch pie dish. Sprinkle the remaining 1/2 cup cheddar cheese on top. Bake for 15 minutes, then broil on high for 1-2 minutes until the cheese is starting to turn golden brown.

7. Let cool for 5 minutes, then top with the remaining bacon and sliced scallions. Serve with tortilla chips, crackers, or carrot sticks while the dip is still warm.
