Ingredients
- 1/2 cup extra virgin olive oil
- Juice of 2 limes
- 1 small jalapeño, finely minced (remove the seeds and ribs if you like it less spicy)
- 1 teaspoon honey
- 1/4 teaspoon Harmony Citrus Finishing Salt, plus more for garnish
- 1/8 teaspoon black pepper
- 6 cups seedless watermelon, cut into 1-inch cubes
- 1 English cucumber, cut into 3/4-inch chunks
- 8 oz. feta cheese block, cut into 1/2-inch cubes
- 1/4 cup fresh mint, basil, or cilantro leaves, thinly sliced
- 1 jalapeño, thinly sliced
Instructions:
1. In a small jar with a lid, combine the extra virgin olive oil, fresh lime juice, minced jalapeño, honey (or agave nectar), Harmony Citrus Finishing Salt, and black pepper. Shake well until all ingredients are thoroughly combined. Taste and add more salt if desired.
2. On a serving platter, arrange the watermelon, cucumber, and feta cheese. Drizzle the vinaigrette over the watermelon and feta.
3. Top with the sliced jalapeño, herbs, and a generous sprinkle of Harmony Citrus Finishing Salt. Serve immediately or store leftover salad in the fridge for up to 2 days.
