Ranch Pickle Marinated Grilled Chicken

Simply remove dill pickles from their jar and mix the juice with Harmony Ranch Blend, a little brown sugar, and salt. Drop a package of chicken thighs into the jar and let marinate for a few hours in the fridge before grilling to perfection. The result? Juicy, tender chicken with a tangy, savory kick that you won’t be able to get enough of! It pairs beautifully with classic summer sides like potato salad and corn, and any leftovers are fantastic in salads and sandwiches all week long.

Ingredients

  • 1 32 oz. jar kosher dill pickle spears or chips
  • 1 tablespoon Harmony Ranch Blend
  • 1 tablespoon brown sugar
  • 1 teaspoon kosher salt
  • 1 1/2 lb. boneless skinless chicken thighs

Instructions:

1. Remove the pickles from the jar and dump out about 1/2 cup of the juice (so that the chicken fits in the jar without overflowing!)

2. Add Harmony Ranch Blend, brown sugar, and salt into the pickle juice and stir to combine.

3. Add the chicken thighs into the jar. Let marinate in the fridge for at least 3 hours and up to 12 hours.

4. Preheat your grill to medium high heat.

5. Remove the chicken thighs from the jar and grill for 4-6 minutes per side until fully cooked (165ºF internal temperature).

6. Serve immediately or save the leftovers for sandwiches and salads!
