Steak, Blue Cheese & Caramelized Onion Crostini

Need an elegant but easy appetizer? These steak, blue cheese, and caramelized onion crostini are a showstopper! Crispy baked baguette slices are topped with funky blue cheese, sweet caramelized onions, and tender slices of steak seasoned with Harmony All Purpose Blend. Top it off with a little arugula, olive oil, and Harmony Citrus Finishing Salt for a bright, citrusy finish. They’re perfect for a dinner party, holiday party, or girl dinner any night of the week!

Cook Time: 1 hour

Ingredients:

  • 1 yellow onion
  • ¼ teaspoon kosher salt
  • 4 tablespoons avocado or olive oil, divided
  • 1 demi baguette, cut diagonally into 1/2 inch slices
  • ½ lb flank steak
  • 1 tablespoon Harmony All Purpose Blend
  • 3 oz softened blue cheese (or soft cheese of choice)
  • ½ cup arugula
  • Harmony Citrus Finishing Salt

Instructions:

 

  1. Take the steak out of your refrigerator and let it rest on the counter for 30 minutes before cooking
  2. Make the caramelized onions: In a large skillet over low heat, add 1 tablespoon olive oil and onions and season with salt. Cook until the onions are caramelized and deeply golden brown, stirring occasionally. This will take about 45 minutes to 1 hour.
  3. When the onions are about halfway done, preheat the oven to 425ºF. Brush the baguette slices with 1 tablespoon olive oil, then arrange on a baking sheet. Bake until golden brown and crisp, about 8 minutes.
  4. Season steak on both sides with Harmony All Purpose Blend, using your fingers to rub in the seasoning. Heat 1 tablespoon olive oil in a cast iron skillet over medium high heat, then cook the steak for 3-5 minutes per side, depending on your desired doneness. Let rest for 5 minutes, then slice into thin strips the same length as the crostini (2-3 inches).
  5. Spread a layer of blue cheese on each crostini, then top with a spoonful of caramelized onions, a slice of steak, a piece of arugula, a drizzle of olive oil, and a sprinkle of Harmony Citrus Finishing Salt. Serve on a platter immediately.
