Parmesan Ranch Smashed Roasted Brussels Sprouts

This easy recipe is hands-down my favorite new way to make brussels sprouts. Because who doesn’t love crispy parmesan cheese and delicious ranch flavor?! All you need is four ingredients and 30 minutes to make this gorgeous, healthy side dish that will convert anyone into a brussels sprouts lover. It’s perfect for the holidays or anytime you need a fun, nutritious vegetable side. Bonus points if you serve them with our Ranch Dip!

Cook time: 20 minutes
Total time: 30 minutes

 

Ingredients:

  • 1 pound large brussels sprouts, stem ends trimmed
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon Harmony Ranch Blend, plus more for topping
  • ½ cup + 2 tablespoons finely grated parmesan cheese*, divided
  • Cooking spray

*You can grate it yourself or use the finely grated kind from the refrigerated cheese section!

 

Instructions:

  1. Bring a medium size pot of heavily salted water to a boil.

  2. Boil brussels sprouts for 8-10 minutes until fork-tender (they need to be soft enough to smash!)

  3. Preheat oven to 425ºF.

  4. Drain brussels sprouts and transfer them to a large bowl. Add the olive oil, Harmony Ranch Blend, and ½ cup grated parmesan and use a large spoon to toss everything until well coated.

  5. Spray a large baking sheet generously with cooking spray.

  6. Transfer the brussels sprouts to the baking sheet and use the bottom of a mason jar or heavy bottomed pot to firmly smash them about ½ inch thick. (It’s ok if they break apart a bit!)

  7. Arrange the brussels sprouts evenly across the sheet pan and sprinkle the remaining 2 tablespoons of parmesan cheese on top.

  8. Roast for 8-10 minutes until the parmesan is golden brown and crisp. Sprinkle extra Harmony Ranch Blend and Citrus Finishing Salt on top of each brussels sprout, then use a spatula to transfer them to a serving platter. Enjoy!
