Ingredients:
- 1 tablespoon olive oil
- 1 8-oz. block feta cheese
- 10 large eggs
- 2 teaspoons Harmony Mediterranean Blend
- Toasted sourdough bread for serving
Instructions:
1. Preheat oven to 375ºF.
2. Grease a 9x9 inch pan with the olive oil, using your fingers to rub the oil all over the base and sides of the pan.
3. Place the block of feta cheese in the center of the pan. Crack the eggs around the feta block. Evenly sprinkle the Harmony Mediterranean Blend over the eggs and feta.
4. Bake for 22-25 minutes until the eggs are set.
5. Use a fork to mash the feta and eggs together.
6. Serve on toast with an extra sprinkle of Mediterranean Blend on top.
