Potatoes, chicken thighs, and zucchini are seasoned with tons of Harmony Ranch Blend, then roasted to tender perfection. The final touch is a tangy, refreshing Ranch Sauce made with – you guessed it! – Harmony Ranch Blend. Drizzle it over the hot-out-of-the-oven sheet pan to transform those simple ingredients into a bright, craveable, and incredibly easy dinner that the whole family will love.

For the sheet pan:
- 1 1/2 lb. Yukon gold or baby gold potatoes, cut into bite-sized pieces
- 3 tablespoons olive oil, divided
- 1 3/4 teaspoon kosher salt, divided
- 2 tablespoons Harmony Ranch Blend, divided
- 1 1/2 lbs. boneless skinless chicken thighs
- 2-3 zucchini, sliced into 1/2-inch rounds
For the ranch sauce:
- 1/2 cup sour cream or Greek yogurt
- 1 tablespoon Harmony Ranch Blend
- 1 tablespoon lemon juice
- 1/4 teaspoon kosher salt
- Freshly ground black pepper
- 2-3 tablespoons water
Instructions:
1. Preheat the oven to 450ºF.
2. Place the cut potatoes on a large sheet pan. Drizzle with 1 tablespoon olive oil, 2 teaspoons of Harmony Ranch Blend, and ½ teaspoon kosher salt. Toss to coat and arrange in an even layer, cut-side-down, on one half of the sheet pan. Bake for 12 minutes.
3. While the potatoes bake, season the chicken: In a large bowl, toss the chicken thighs with 1 tablespoon olive oil, 1 tablespoon Ranch Blend, and 1 teaspoon kosher salt.
4. Season the zucchini: add the zucchini rounds to a clean bowl and toss with 1 tablespoon olive oil, 1 teaspoon Harmony Ranch Blend, and 1/4 teaspoon kosher salt.
5. Remove the sheet pan from the oven. Add the chicken thighs and zucchini to the open half of the sheet pan. Bake for another 20-25 minutes or until the chicken is fully cooked (to an internal temperature of 165ºF). If the chicken and zucchini aren’t brown enough, you can turn on the broiler for a couple of minutes!
6. While that bakes, make the ranch sauce: In a small bowl, combine sour cream or greek yogurt, Harmony Ranch Blend, lemon juice, kosher salt, pepper, and 2 tablespoons water. Whisk to combine and add more water if needed to make it drizzle-able. Store in the refrigerator until ready to serve.
7. Remove the sheet pan from the oven and divide onto four dinner plates. Drizzle on the ranch sauce and finish with another sprinkle of Harmony Ranch Blend if desired. Dig in!
