
This dip is only 3 ingredients (if you don’t count the salt + pepper) and you can customize it by using sour cream or greek yogurt based on your preference. Caramelizing onions takes a little bit of patience, but it is sooo worth it. Serve with ridged potato chips or carrots and celery and prepare to be OBSESSED.
Ingredients:
- 2 tablespoons olive oil
- 2 large yellow onions, thinly sliced into half moons or diced
- 2 cups Greek yogurt or sour cream
- 1 tablespoon Ranch Blend
- Kosher salt & pepper to taste
- Crinkle potato chips like Ruffles
- Sliced carrots and celery
Instructions:
Heat the olive oil over medium low heat in a large skillet. Add the onions and a pinch of salt and pepper and stir every minute or so for 30-40 minutes until the onions turn a deep brown. Let them cool for 10 minutes before adding to the yogurt/sour cream.
In a medium sized bowl, add the Greek yogurt/sour cream, onions, Ranch Blend, and kosher salt and pepper to taste.
Refrigerate for as long as you can wait to eat it (at least 30 minutes, up to overnight). Serve with your potato chips and crunchy veggies of choice.
