Southwest Cowgirl Dip

This Southwest Cowgirl Dip will make you the most popular person at your Super Bowl party. This cheesy, chunky dip is what dreams are made of!! It takes 10 minutes to prep, and then you just pop it in the oven when you’re ready to eat.

 

Serves: 6

Ingredients:

  • 8 oz cream cheese, room temperature
  • 1/2 cup Greek yogurt or sour cream
  • 1 16 oz jar chunky red salsa
  • 4 oz can diced green chiles
  • 2 tablespoons Southwest Blend
  • 3 cups frozen fire roasted corn
  • 1 can black beans, drained and rinsed
  • 1 1/2 cups Monterey Jack cheese
  • Chopped green onion on top
  • Tortilla chips to serve

Instructions:

  1. Preheat oven to 400 degrees.
  2. In a large mixing bowl, use a fork to combine the cream cheese, Greek yogurt, salsa, green chiles, and taco seasoning. Once smooth, gently stir in the corn, beans and 1/2 cup of the cheese.
  3. Pour the mixture into an oven proof skillet or baking dish and top with the remaining cheese.
  4. Bake for about 20 minutes or until bubbling hot and cheese is melted.
  5. Serve hot with green onions on top and tortilla chips for dipping.
