Southwest Salmon Bite Burrito Bowls with Creamy Jalapeño Sauce

For the Creamy Jalapeño Sauce:

  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons pickled jalapeños
  • 1 tablespoon brine from the jalapeños
  • 1 scallion, chopped
  • Juice from 1/2 lime
  • 1 tablespoon Harmony Southwest Blend 

For the Salmon Bites:

  • 1 1/2 lb. salmon fillet, skin removed
  • 1 tablespoon olive oil
  • 2 tablespoons Harmony Southwest Blend
  • 1/2 teaspoon kosher salt

For Serving:

  • 3 cups cooked rice
  • 1 cup cooked black beans
  • 2 tablespoons chopped cilantro
  • 1 avocado, sliced
  • 1/2 cup pico de gallo or your favorite salsa
  • Lime wedges


Instructions:

1. First make the sauce by blending together all ingredients. Store in the refrigerator until ready to use (or up to 4 days).

2. Prepare the salmon: Use a sharp knife to cut the salmon into 1-inch cubes. Add salmon cubes to a mixing bowl and toss with the olive oil, Harmony Southwest Blend, and salt until well coated.

3. Heat a large nonstick skillet over medium heat. When the pan is hot, arrange the salmon bites in a single layer (not touching or overlapping; cook in batches if needed) and cook for 3 minutes. Flip and cook for another 2 minutes until the bites are cooked through (it’ll flake when you break it open with a fork). 

4. Assemble your bowls with the rice and beans, salmon bites, avocado, pico de gallo, the creamy sauce, chopped cilantro, and lime wedges. Enjoy!
