Harmony Grain Bowl w/ Creamy Feta Dressing

A hearty grain bowl with a delicious sauce should be a staple in everyone’s weekly meal plan. This is a go to in my house.

The Creamy Feta Dressing uses our Mediterranean Blend for the perfect, balanced dressing that could honestly make anything taste good.

Serves: 4

Time: 30 minutes

Ingredients:

  • 1 lb flank steak or chicken breast (or protein of choice)

  • 1 large sweet potato, peeled and chopped
  • 2 cups broccoli florets
  • 1 tablespoon Harmony All Purpose Blend, plus more to taste
  • 2 tablespoons avocado or olive oil
  • 1 large avocado, cut into cubes
  • 2 cups cooked quinoa or grain of choice
  • Lemon squeeze  to finish
    Creamy Feta Dressing:
    • 1/2 cup feta, crumbled

    • 1 small lemon, juiced
    • 1 garlic clove, chopped
    • 2 tablespoons greek yogurt
    • 2 tablespoons water 
    • 2 teaspoons Harmony Mediterranean Blend 
    • Salt and pepper to taste

       

      Instructions:
      • Preheat the oven to 400 degrees. 

      • Make the creamy feta dressing by blending all ingredients until smooth. Season with salt and pepper to taste. Refrigerate until ready to serve.
      • On a large sheet pan, toss the sweet potatoes with ½ tablespoon oil and 1 teaspoon Harmony All Purpose Blend. Bake for 12 minutes then flip. Add the broccoli, ½ tablespoon oil and 1 teaspoon Harmony Everyday Blend, and toss to coat. Bake for another 12 minutes.
      • While that bakes, make your protein. Season with 2 teaspoons of Harmony All Purpose Blend to generously coat your steak or chicken. Add 1 tablespoon of oil to a grill pan or cast iron skillet. Alternatively, you can grill your protein on a well oiled grill. For steak, cook for 3-5 minutes on each side, depending on your desired doneness. For chicken, cook for 3-4 minutes on each side until cooked through. Slice and serve with the rest of the bowl components. Drizzle with Creamy Feta Dressing and a squeeze of lemon. Season with Harmony All Purpose Blend to taste.
