Serves: 6
Time: 35 minutes
Ingredients:
For the Chicken Fingers:
- 2 lb. chicken tenders (or breasts cut into 1 inch-wide strips)
- 1 tsp. kosher salt
- ¼ c. all-purpose flour
- 2 eggs
- 1 c. panko breadcrumbs
- 1 tbsp. Harmony Ranch Blend
- Avocado oil cooking spray
For the Ranch Dip:
- 1 cup sour cream or Greek yogurt
- 2 tablespoons Harmony Ranch Blend
- 2 tablespoons lemon juice
- Kosher salt and pepper to taste
Instructions:
- Preheat oven to 425ºF and line a baking sheet with aluminum foil, then top with a wire rack. Spray the wire rack with cooking spray.
- Set up your breading station: Place three shallow bowls on your counter. In the first bowl, whisk the all purpose flour and 1 tsp. salt. In the second bowl, beat the eggs. In the third bowl, use a fork to toss the panko breadcrumbs with Harmony Ranch Blend.
- Working one piece of chicken at a time, dredge in flour, then dip in egg, then coat with breadcrumbs, and finally place it on the wire rack. Make sure the chicken fingers have a little space between each one on the rack.
- Spritz the top of the chicken fingers with a little cooking spray, then bake for about 20-25 minutes, flipping halfway, or until they reach an internal temperature of 165ºF. (If they aren’t as golden as you’d like, feel free to broil for a couple minutes at the end.)
- While the chicken fingers bake, make your ranch dip. In a small bowl, combine sour cream or greek yogurt, Harmony Ranch Blend, lemon juice, and kosher salt and pepper to taste. Store in the refrigerator until ready to serve.
- Serve chicken fingers and the bowl of ranch dip on a platter and enjoy!
Note: If you want the chicken fingers to be extra golden brown, before breading the chicken, you can toast the panko breadcrumbs plus a spritz of cooking spray on a baking sheet for a few minutes until they’re golden!
