Double Ranch Chicken Fingers

If you’re a ranch lover, you’re going to be obsessed with these double ranch chicken fingers. Harmony Ranch Blend – a beautiful balance of garlic, onion, parsley, dill, and chives – is mixed into the breading and the creamy sauce for a one-two punch of delicious flavor. They’re baked to crispy perfection and packed with protein for a healthy, satisfying meal that both kids and adults will love!

 

Serves: 6

Time: 35 minutes

Ingredients:

For the Chicken Fingers:

  • 2 lb. chicken tenders (or breasts cut into 1 inch-wide strips)
  • 1 tsp. kosher salt
  • ¼ c. all-purpose flour
  • 2 eggs
  • 1 c. panko breadcrumbs
  • 1 tbsp. Harmony Ranch Blend
  • Avocado oil cooking spray

For the Ranch Dip:

  • 1 cup sour cream or Greek yogurt
  • 2 tablespoons Harmony Ranch Blend 
  • 2 tablespoons lemon juice 
  • Kosher salt and pepper to taste

 

Instructions:

  • Preheat oven to 425ºF and line a baking sheet with aluminum foil, then top with a wire rack. Spray the wire rack with cooking spray.
  • Set up your breading station: Place three shallow bowls on your counter. In the first bowl, whisk  the all purpose flour and 1 tsp. salt. In the second bowl, beat the eggs. In the third bowl, use a fork to toss the panko breadcrumbs with Harmony Ranch Blend.
  • Working one piece of chicken at a time, dredge in flour, then dip in egg, then coat with breadcrumbs, and finally place it on the wire rack. Make sure the chicken fingers have a little space between each one on the rack.
  • Spritz the top of the chicken fingers with a little cooking spray, then bake for about 20-25 minutes, flipping halfway, or until they reach an internal temperature of 165ºF. (If they aren’t as golden as you’d like, feel free to broil for a couple minutes at the end.)
  • While the chicken fingers bake, make your ranch dip. In a small bowl, combine sour cream or greek yogurt, Harmony Ranch Blend, lemon juice, and kosher salt and pepper to taste. Store in the refrigerator until ready to serve. 
  • Serve chicken fingers and the bowl of ranch dip on a platter and enjoy!

 

Note: If you want the chicken fingers to be extra golden brown, before breading the chicken, you can toast the panko breadcrumbs plus a spritz of cooking spray on a baking sheet for a few minutes until they’re golden!
